I am making a  breakfast for 50 on Sunday the 22nd.  So I decide to freeze blueberry muffin batter in order to make life a bit easier that morning.  It worked!  Usually I pile the batter in to make big muffins, but the muffin papers look full enough so I didn’t stuff them.   They thawed in about 2 hours and cooked up delicious.   Little but good.  Looks like it’s a plan. 

Menu is coffee, homemade granola with yogurt and fresh berries, and blueberry muffins.
