Randi is hosting a Recipe Box Swap, check it out.  Today’s theme Garden Fresh Elizabeth had inspired me with her Zucchini Pie.

Give Zucchini Soup a try, Vegetarians, use olive oil and vegetable stock.

2 slices bacon chopped fine

1/2 c onions chopped

1 c cooking sherry

1 c chicken broth

2 squash cut into 1″-2″ cubes


Saute bacon till crispy, remove and saute onions till starting to brown.  De glaze pan with sherry.  Add squash and bacon stirring often 10 minutes.  Add stock and salt and pepper to taste.  Simply yummy… a nice summer taste!

Of course you can add tomatoes and cheese or anything else you like.
